Mother's Day Recipes: Banana Bread

No one will be able to resist this delicious bread.

  • 2½ cups white sugar
  • 1¼ cups buttermilk
  • 1 cup shortening
  • 1½ tsp baking soda
  • 3 eggs
  • 1½ tsp baking powder
  • 1½ cups bananas, mashed
  • 1tsp vanilla extract
  • 3 cups all-purpose flour
  • ½ cup chopped walnuts (optional)

1. Preheat oven to 350ºF (175ºC).

2. Mix the shortening and sugar until it is well blended (should have a creamy texture).

3. Add the eggs, one at a time, mixing well after each egg.

4. Stir in the bananas, buttermilk and vanilla. When thoroughly combined, add in the flour, baking soda, baking powder and walnuts. Mix well.

5. Grease two 9 x 5 inch pans and then pour in batter.

6. Bake for 50 to 60 minutes or until inserted toothpick comes out clean.
