Mother's Day Recipes: Tangy Green Beans

These delicious green beans will taste great beside any meat dish.

  • 2lbs fresh green beans, trimmed
  • 1½ tsp red wine vinegar
  • 3 tbsp unsalted butter
  • 3 tbsp chicken broth
  • 1 large red onion, quartered and thinly sliced
  • 3 tbsp cilantro, finely chopped
  • 2 cloves garlic, minced
  • salt and pepper to taste

To Prepare Beans
Cook beans for about 3 minutes in a pot of lightly salted boiling water. Drain beans and run cold water over them until cool. Drain and pat dry.

To Season Beans
1. In a pan over medium heat, melt 1tbsp of butter. Mix in the onion and garlic and sauté until onion is soft.

2. Add and melt the last 2 tbsp of butter before mixing in the beans.

3. Mix in the vinegar and broth. Finally, season with salt and pepper to taste before adding the cilantro.

4. Reduce the heat, cover and let the beans simmer for about 15 minutes or until they are tender.
