Valentine Desserts: Banana Chocolate Bread Pudding with Mint Crème Anglaise

What You'll Need

  • 4 tablespoons unsalted butter
  • 4 large eggs
  • 1 cup light brown sugar
  • 4 cups of cream
  • 1 cup milk
  • 1 ½ teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 or 3 ripe bananas
  • 1/2 cup pecan pieces
  • 6 cups day-old bread cubes (1/2-inch)
  • 6 ounces bittersweet chocolate (chopped)
  • 2 1/2 cups Mint Créme Anglaise
  • 2 teaspoons granulated sugar
  • Confectioners' sugar

What You'll Need to Do

  1. Preheat the oven to 350 degrees Fahrenheit
  2. Grease a baking dish (about 10 x14 inches) with 2 tablespoons of butter
  3. In a large bowl, crack the eggs and pour 3 cups of cream, brown sugar and milk. Stir thoroughly.
  4. Add granulated sugar, and half teaspoon of vanilla to the remaining cup of cream and stir thoroughly before adding it to the bowl.
  5. Smash bananas and add to mixture, along with the pecan pieces, bread cubes, chocolate chunks, and remaining vanilla. Mix and blend the pudding mixture thoroughly.
  6. Add in the remaining 2 tablespoons of butter, and pour the mixture into the baking dish. Allow it to bake for an hour, until firm.
  7. Remove from oven and place on a rack to let the pudding cool. Cut into squares when still warm.
  8. When serving, drizzle 2 tablespoons of Mint Créme Anglaise on each plate, before placing the square of pudding on the plate. Then top off the pudding with whipped cream and sprinkles of Confectioner's sugar.
