Asian-inspired Sweet and Sour Ribs

Ribs are a classic feature of any backyard barbeque. Give the usual BBQ sauce and ribs a tasty twist with these Asian-inspired ribs.

  • 4 lb pork spareribs
  • 2 tbsp fish sauce
  • 1 finely chopped red onion
  • ¼ cup tomato paste
  • 2 crushed garlic gloves
  • ¼ cup lime juice
  • 1 tbsp grated ginger root
  • 2 tbsp honey
  • 1 tbsp peanut oil
  • 1/3 cup Thai sweet chili sauce
  • ½ cup pineapple juice

1. Prepare ribs by separating them between the bones and simmering them in salted water for 30 minutes. Ribs should be slightly tender. Drain and rinse the ribs twice before leaving them to cool.

2. In the meantime, sauté the onion, garlic, ginger and peanut oil over medium heat for 5 to 10 minutes or until the onions have slightly softened.

3. Next, combine the pineapple and lime juice, honey, tomato paste, fish sauce and 2 tbsp of the chili sauce to the onion mixture.4. Once the mixture is boiling, reduce the heat and allow the sauce to simmer until it thickens (about 10 minutes). Remove from heat.

5. When the sauce has completely cooled, liberally brush it over the ribs and then barbeque over medium heat. Turn the ribs frequently, using the remaining chili sauce to brush over the ribs during cooking. Cook until the ribs are brown and crispy (about 15 minutes).
