Valentine Dessert Recipes: Raspberry Tart

Looking for something original this Valentine’s? Why not treat your sweetheart to a tart! This easy to make and delicious dish will never fail to impress. You can surely expect a smile from your valentine when you present them with a slice of this crisp buttery pastry dessert filled with ruby red raspberries.

Ingredients

Pate Brisee (Crust pastry):

  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • 1 tablespoon granulated white sugar
  • half cup (1 stick) unsalted butter, cut into 1 inch pieces
  • 1/8 to ¼ cup (30-60ml) of water

Filling:

  • 2 cups fresh raspberries
  • 2 tablespoons granulated white sugar

Pour the flour, salt, and sugar into a food processor and mix. Add the butter and process for approx. 15 seconds. Pour 1/8 cup water slowly. Dough should hold together when pinched. Add more water if necessary, but don’t process for more then 30 seconds.

Remove the pastry from the processor, roll it into a ball, cover it with plastic wrap and refrigerate it for about 1 hour.

After 1 hour, remove pastry from fridge and place it on a floured surface. Roll from the centre of the pastry outwards into an 11 inch round. Place the pastry onto a baking sheet and sprinkle it with 1 tablespoon of sugar. Rest the raspberries onto the pastry and leave a 1 ½ inch border all around. Fold the edges of the pastry up. Pleat if necessary. Sprinkle remaining sugar over the raspberries.

Preheat oven at 450 degree Fahrenheit and bake for about 20 minutes. When the pastry is golden brown and the raspberries have given off a little juice, remove from oven and place on a cooling rack. Dust with powdered sugar and serve with whipped cream or ice cream.
