Carrots with Ginger and Honey

These carrots will help echo the flavors of any meat dish done with a honey or ginger glaze. They go especially well when served with Orange and Ginger Glazed Ham.

  • 1lb sliced carrots
  • 2½ tbsp honey
  • ¼ cup butter or margarine
  • 1 tbsp lemon juice (or to taste)
  • Pinch ground ginger

1. Cook carrots in a pot of boiling water until firm but tender (about 5 minutes). Drain.

2. In a large skillet or saucepan, melt the butter or margarine with honey over low heat.

3. Add in the ginger and lemon juice, stirring.

4. Stir in the carrots and let everything simmer until it is heated through. Serve immediately.
