Mandarin Broccoli

The mandarin oranges in this dish will help keep the vegetables light and refreshing.

  • 2 11oz cans of mandarin oranges
  • 1½ tsp cornstarch
  • 2 heads of broccoli, chopped into florets
  • ¼ cup peanut oil
  • 1 tbsp soy sauce
  • 2 tbsp molasses
  • ½ tsp ginger
  • 2 tbsp sesame seeds

1. Drain the mandarin oranges but save the juice.

2. Mix a ¼ cup of the mandarin juice with the molasses, soy sauce, ginger and cornstarch. Set aside.

3. In a wok, heat oil over medium-high heat before adding the broccoli florets and one can of mandarin oranges. Sauté until the broccoli is heated through (the oranges will almost be dissolved).

4. Stir in the mandarin juice sauce. Be sure to toss the broccoli so that it is all coated.

5. When broccoli is tender (approx. 3 minutes), remove the wok from the heat and toss the broccoli together with the second can of mandarin oranges. Sprinkle with sesame seeds before serving.
